4 eggs 1/2 c sugar1 tsp orange extract2 tsp cinnamon1 tsp clove1 tbs butter, softened2 1/2 c flour48 oz vegetable shortening1 lb shelled walnuts1 1/2 c honeyConfetti sprinkles
*In the bowl of a food processor combine first 6 ingredients. Mix until just blended.*Slowly add in flour, about a cup at a time until a smooth dough forms. You should be able to work the dough in your hands.*Place dough in a lightly floured bowl, cover with a dish towel and let res for 30 minutes.*Heat shortening in a fry pan or deep fryer to 425 degrees.*Cut the dough into small pieces and roll into thin snakes. Cut each snake into small pieces, a bit larger than a pea.*Add strufoli to hot oil in batches and fry until golden brown.*Drain on paper bags covered in paper towels.*Once all the dough has been fried and cooled, mix strufoli with walnuts in a large bowl.*Heat honey in a small saucepan until warm but not boiling. Pour over strufoli and mix until all pieces are covered evenly.*Mound strufoli onto a plate and top with confetti sprinkles.
