The Labor Day holiday was cut short for one family when the mother went into labor at the Cheesequake Rest Area in Sayreville.
Jackson Eskow was born three weeks early when his mom gave birth in the back of an ambulance at 2:05 this afternoon at the rest stop.
Michele Eskow, of New York City, had been relaxing in the sand at Ortley Beach with friends when she felt contractions.
Husband Scott Eskow had been playing golf in West Orange, so the two planned to meet at the rest area before heading to Lenox Hill Hospital in New York.
But when she made it to Cheesequake, her water broke.
Raritan Bay Medical Center Paramedic Kelly Bolton and her crew delivered the baby in the parking lot.
Eskow says it only took her two pushes and the baby was out.
Jackson Eskow was born at 5 pounds, 15 ounces. This is the couple's second child.
