Chef Vinny, of Uncle Giuseppe's Marketplace, shows News 12's Lily Stolzberg how to make Potato Pepper and Egg Hero.
Potato Pepper & Egg Hero 
½ cup red pepper (sliced) 
½ cup orange pepper (sliced) 
¼ cup white onion (sliced 
1 tbs. olive oil 
½ cup roasted potatoes (medium dice) 
2 tbs. pecorino romano 
2 tbs. butter 
4 whole eggs (beaten) 
4 slices provolone 
1 seeded hero 
½ tsp. salt 
¼ tsp. black pepper 
  1. In a sauté pan on medium-high heat, add the olive oil and allow it to come to temperature.  
 
  1. Once the oil is hot, add the red peppers, orange peppers, onions, salt and black pepper  
    and sauté.  
 
  1. Once the peppers and onions have gained some color remove from the sauté pan and place into a casserole dish.  
 
  1. Add the diced potatoes, pecorino cheese, half of the butter and eggs to the mixture in the casserole dish and mix until all ingredients have been fully incorporated.  
 
  1. Place the rest of the butter onto the top of the egg mixture.  
 
  1. Place the casserole dish into a 350⁰ oven for 10 minutes, or until the eggs are cooked but still have some runniness to them.  
 
  1. Mix the egg mixture with a spoon after it comes out of the oven. 
 
  1. Cut the hero bread lengthwise almost all the way through and place 3 pieces of provolone cheese in the bread. 
 
  1. Scoop the egg mixture and place in the bread on top of the cheese.
