Chef Frankie Mosca, of Uncle Giuseppe's Marketplace, shows News 12's Lily Stolzberg how to make Ricotta Cookies.

Ingredients:

¼ lb. butter (softened)
1 cup sugar
1 large egg
1 tbs. vanilla extract
2 tbs. heavy cream
¾ cup ricotta
2 cups cake flour
2 cups bread flour
½ tsp. baking powder
½ tsp. baking soda
2 cups icing
¼ cup rainbow sprinkles

Directions:

1. Start by mixing the butter and the sugar until smooth.
2. Add the egg, vanilla, cream, and ricotta and mix until all are incorporated.
3. Next add the cake flour, the bread flour, baking soda and baking powder.
4. Mix until all are incorporated, and the mix resembles cookie dough.
5. Remove the cookie dough from bowl and roll to form a log.
6. Cut the log into 24 pieces and place each piece on a papered sheet pan.
7. Bake at 330 degrees for 9 minutes.
8. Remove from the oven and let cool.
9. Once the cookies are cool, proceed to dip in icing and sprinkle with sprinkles.

Icing:

¾ cup heavy cream
1 ½ cup powdered sugar.
The juice of half a lemon
1. In a small bowl add all ingredients and mix until smooth and the mix resembles icing.
