Lawrenceville School goes green with greens

The Lawrenceville School in Mercer County claims to have found a way to boost the local economy, offer more nutritious meals and reduce its carbon footprint all through it's "green campus initiative."

The Lawrenceville School in Mercer County claims to have found a way to boost the local economy, offer more nutritious meals and reduce its carbon footprint all through it's "green campus initiative."
Administrators and officials say everyone wins when you buy locally grown food. Gary Giberson, dining services director, says local food is fresher and therefore packed with more nutrients. Buying locally also cuts down on shipping costs - both financially and on the environment.
"For instance, the asparagus we are serving today was picked yesterday," says Giberson.
The school also is trying to lower waste. As part of the initiative, leftover and unused food isn't tossed in the trash, but rather mixed with cardboard to create mulch. That mulch is then used on campus gardens.
"When you're involved and part of a community this large, you want to do every little thing you can do to do your part and make sure you're not over-using or wasting anything," says student Dorothy Muldoon.
