used for testing says tests should probably be conducted on a periodic basis. However, Elizabeth Health Office John Surmay says that?s simply not possible. According to Surmay, the number of restaurants that would need testing would make the move cost prohibitive. Members of the New Jersey Restaurant Association also believe periodic testing is unnecessary, as the number of health problems reported by customers is extremely small.
