Chef Vinny Olivieri, of Uncle Giuseppe's Marketplace, shows News 12's Lily Stolzberg how to make beer battered cod sandwich.

Ingredients:

  • 1 6oz cod filet

  • 1 cup golden dipt batter mix

  • ½ cup rice flour

  • 1 tsp seafood seasoning

  • 12 oz beer

  • 1 slice American cheese

  • 2 tbs. tartar sauce

  • ½ cup iceberg lettuce (shredded)

  • 1 brioche bun (toasted)

  • 2 qt oil (for frying)

Directions:

  1. In mixing bowl add rice flour, golden dipt, and seafood seasoning.  Mix until all are incorporated.

  2. Place the cod in the flour, coat and set aside.

  3. Slowly add the beer to the bowl with the flour whisking while adding.

  4. The batter should resemble a slightly thinner pancake batter.

  5. Add oil to a pot and heat to 325 degrees.

  6. Submerge the cod in the beer batter.

  7. Carefully remove the cod from the batter shaking off any excess batter and gently place in the hot oil.

  8. Cook for approximately 2 minutes or until the batter reaches a golden-brown color.

  9. Remove the cod from the fryer and place on a paper towel line dish.

  10. Begin assembling the sandwich by placing 1 tbs. of tartar sauce on the bottom bun next lay the cod on top of the sauce.  Add the cheese on top of the cod.  Top the cheese with the lettuce.  Finally place 1 tbs. of tartar sauce on the cut side of the top bun and place it on the lettuce.
