A Newark-based chef is changing how people think about food trucks by bringing restaurant experience and inventive dishes to the streets through his mobile kitchen.

Nyreek Aliuthmar, now known as Chef Hub, runs a food truck called Hitting Ur Belly, featuring items such as truffle steak fries and chicken cooked inside waffles.

The menu changes every few months, allowing him to keep developing new ideas and refining his craft.

The 32-year-old said he learned by watching others in the kitchen and absorbing knowledge from more experienced chefs.

“Paying attention to the older chefs, paying attention to the people that was around me, and just picking up that knowledge, being a sponge and soaking it up,” he said.

He said it took persistence and a bit of luck to get his first break while working at a Red Lobster.

Aliuthmar recalled asking repeatedly to work in the kitchen until, during the week of Christmas, the entire kitchen staff called out.

He said he made the most of that opportunity and has not looked back.

Hitting Ur Belly is always on the move, and Aliuthmar posts the truck’s weekly schedule on social media.
