Chef Vinny Olivieri, of
Uncle Giuseppe's Marketplace, shows News 12's Lily Stolzberg how to make Roasted Pork Broccoli Rabe and Sharp Provolone Hero.
INGREDIENTS:
1-3lb pork loin
¼ cup honey
1 tbs. fennel seed (finely chopped)
1 tsp red pepper flakes
2 tbs sugar
2 tbs rosemary (finely chopped)
2 tbs thyme (finely chopped)
1tsp salt
½ tsp black pepper
1 lb. broccoli rabe (blanched, sauteed and chopped)
1 cup chicken broth
¾ lb. sharp provolone (thinly sliced)
3 each semolina heroes
DIRECTIONS:
1. In a small bowl mix together the fennel seed, red pepper flakes, sugar, rosemary, thyme, salt, and pepper creating a rub.
2. Place the pork loin on a roasting pan, drizzle with honey and fully coat with the rub.
3. Place in a preheated oven and cook at 325 degrees for 45- 50 minutes or until the internal temperature reaches 160 degrees.
4. Once the desired temperature is achieved, remove from oven, and let rest for 15 minutes.
5. Remove the pork loin from the roasting pan and place on a cutting board.
6. Deglaze the roasting pan with chicken stock and pour the liquid in a sauté pan on medium heat.
7. Thinly slice the pork and place in the sauté pan along with broccoli rabe and cook for two minutes then remove from heat.
8. Using a serrated knife cut open the bread lengthwise creating a pocket but making sure not to cut all the way though.
9. Place a ¼ lb. of sharp provolone on the bottom of each hero.
10. Fill each hero with an equal amount of the pork and broccoli rabe mixture.
11. Cut each hero in half before serving.
