Chef Vinny Olivieri, of Uncle Giuseppe's Marketplace, shows News 12's Lily Stolzberg how to make Tuscan chicken meatloaf.
Ingredients:
• 2 lbs. ground chicken
• 3 whole eggs
• 1 cup tomato bruschetta
• 1 tbs. garlic (chopped)
• 1 cup seasoned bread crumbs
• ½ cup grated Pecorino Romano
• 1 cup shredded mozzarella
• ½ cup baby spinach (chopped)
• 1 tbs olive oil
• 1 tbs salt
• ½ tbs black pepper
• 2 ea. Roma tomatoes (sliced)
Directions:
1. In a large bowl add eggs, bruschetta, pecorino, shredded mozzarella and garlic.
2. Mix well until all are incorporated.
3. Add the ground chicken, bread crumb, spinach salt and pepper to the bowl and mix until all are incorporated well.
4. In a casserole pan shape the chicken mixture in to a loaf.
5. Layer the sliced tomatoes on top of the loaf sprinkle with salt and drizzle with olive oil.
6. Bake at 350 deg. For 35-45 minutes or until the core temp. reached 165 deg.
7. Let the meatloaf rest for 10 minutes before slicing.
8. Serve with your favorite sauce or gravy. (Francese Sauce Recommended)
