Ingredients:
14oz Sugar
6oz Eggs
10oz Slivered Almond
1 Teaspoon Baking Powder
1 Tablespoon Lemon Flavor
1 Tablespoon Lemon Zest
14oz Flour
Mixing & Baking Instructions:
Place sugar and eggs in mixing bowl and mix on stir for 20 seconds.
Increase speed gradually in burst of 20 seconds until sugar and egg is a creamy foam.
Add lemon zest, baking powder, lemon flavor, almonds, and flour.
Mix on the slowest setting until it forms into cookie dough.
Remove from mixture, and form cookie dough into a log shape.
Egg wash the top.
Place on baking sheet.
Bake at 320 deg. for 20 minutes.
Cool to room temperature and coat with Lemon Icing.
Let the Icing set & cut the entire log into half inch cookies.
Lemon Icing
Ingredients:
1 Cup Powdered Sugar
1 Tablespoon fresh Lemon Juice
3 Tablespoon Water
Mixing Instructions:
Place all ingredients in mixing bowl and whisk together to create a light glaze.
