What's Cooking: Uncle Giuseppe's Marketplace's cauliflower radicchio salad

Ingredients:

1 head Cauliflower

1 head Radicchio (Large Dice)

½ cup Pistachios (Ground)

¼ cup Golden Raisins

4 stalks Celery (Half-Moon)

¼ cup White Balsamic

½ cup Olive Oil

½ tsp Salt

¼ tsp Black Pepper (Ground)

Directions:

1. Cut the cauliflower into small florets and place them in boiling water and cook until

cooked but still has a crunch, about 4 minutes.

2. Once the cauliflower is cooked remove it from the boiling water and place it into cold water

to cool.

3. Once the cauliflower is cooled, remove it from the water and drain completely.

4. In a bowl, place the cauliflower, radicchio, ground pistachios, raisins, celery, white

balsamic vinegar, olive oil, salt, and black pepper, mix until all ingredients are fully

incorporated.
