Cara's Cucina: Prashanthi's Vegetable Quinoa

1 c. uncooked quinoa 1 red onion, chopped1 bell pepper, chopped2 small tomatoes, chopped1 small cucumber, chopped1 small jalapeño, chopped6 cloves of garlic, minced4 tbs. olive oil2 tbs seasoned salt

1 c. uncooked quinoa 1 red onion, chopped1 bell pepper, chopped2 small tomatoes, chopped1 small cucumber, chopped1 small jalapeño, chopped6 cloves of garlic, minced4 tbs. olive oil2 tbs seasoned salt (or to taste)1 tsp onion powder (or to taste)Black pepperJuice of 1/2 a lemon1 tsp white vinegar
*Cooke quinoa according to package instructions.*While quinoa cooks, warm oil in a large sauté pan and add in onion. Cook for 2-3 minutes.*Then add in garlic and jalapeño. Continue cooking until onions begin to caramelize, about another 5 minutes.*Add in the bell pepper and cook for 5 more minutes, then reduce heat to low.*Mix in the tomatoes and the cucumber. *Now add the cooked quinoa to the vegetables.*Season the mix with seasoned salt, onion powder and black pepper.*Squeeze the lemon half over mixture and add in the vinegar. Stir to combine and serve warm as a main course or side!
