Cara's Cucina: Peach Crostada

1 1/2-2 lbs peaches2 1/2 tbs brown sugar Juice of half a lemon2 tbs brandy1 pie crust1 tbs butter *Pre-heat oven to 350.*Wash peaches, pit and slice them. *Toss peaches with lemon juice, sugar and brandy.

*Pre-heat oven to 350.*Wash peaches, pit and slice them. *Toss peaches with lemon juice, sugar and brandy. Allow to sit while you prepare crust.*Roll crust out onto a clean, floured surface until it is about 12 inches in diameter. Place dough on a cookie sheet lined with parchment paper.*Spoon peach mixtures into center of crust, leaving about 2 inches of dry crust around edge. Be sure to get any remaining liquids from bowl on top of peaches.*Dot peaches with butter*Fold edges of dough up and over peaches, creating loose, decorative folds around edge. *Bake crostada for 45 minutes or until juices bubble and crust is golden.*Allow to cool slightly. Serve warm with a scoop of ice cream if you'd like!
