Chef Kevin O'Neill, of EP Local Food Truck, shows Tina Redwine how to make candied sweet potatoes.
Candied Sweet Potatoes
Ingredients:
- 3 lbs of sweet potatoes, diced
- 1 tbs of butter
- Chives
- 1 cup of white sugar
- 1 cup of brown sugar
- 1/2 cup of water
- 3 cinnamon sticks
- Pick of nutmeg
Directions:
In a medium sauce pot, begin making the simple syrup. Place 1 cup of white granulated sugar, 1 cup of brown sugar and half a cup of water. Add three cinnamon sticks, and a pinch of nutmeg in a pot and bring to a gentle boil. Once the water has become a cinnamon syrup add the diced sweet potatoes and bring to a gentle boil for 45 minutes until tender.
