Cara's Cucina: Thanksgiving Side Dishes

Debbie's Sweet Potatoes

2-3 sweet potatoes, washed and halved1 stick of butter, softened, plus extra for buttering dish7 tbs brown sugar2 tbs cinnamon1 tbs nutmeg1 tbs cloves or allspice

*Boil potatoes until fork tender, about 45 minutes*Allow potatoes to cool. Drain and peel. *Cut each piece in half (making quarters) *Butter a baking dish and preheat oven to 350. *Place potatoes cut side down in prepared dish. *Combine butter with sugar, cinnamon, nutmeg and cloves - crumble on top of potatoes. *Bake for 40 minutes.

Dennis' Stuffed Mushrooms

1 lb sweet Italian sausage1 large package of stuffing mushrooms1 large onion, diced4-5 garlic cloves, diced1 box of pork stuffingchicken broth1 box chopped frozen spinach, thawed and water squeezed out1 handful shredded mozzarella1 handful parmegiano cheese plus extra for topping5 springs fresh parsley, chopped5 springs fresh thyme, chopped2 tbs butter1 tbs olive oilblack pepper

*Prepare the mushrooms by removing the stems - save them. Peel mushrooms or use a damp paper towel to clean them. *Dice up remaining mushrooms stems and add to onion and garlic. *Brown sausage, breaking up with a wooden spoon. *In a separate pan warm butter and olive oil and saute onion and mushroom mix until onions are opaque*Prepare the stuffing mix according to package instructions but substitute chicken broth for water. *Combine vegetables with sausage, prepared stuffing, spinach, mozzarella, parmegiano, parsley and thyme. *Taste, add pepper as needed. You probably won't need salt because of the cheese. *Pre-heat broiler. *Stuff mushroom caps and top with extra parm. *Broil for 8-10 minutes.
