Chicken Malai Kabab

2 lbs. Boneless chicken breast pieces
1 tsp. Lemon juice
Salt to taste
½ Tbs. Ginger paste
½ Tbs. Garlic paste
¼ oz. White pepper powder
¼ oz. Coriander powder
¼ oz. Garam masala powder
¼ tsp. Black cumin seeds
¼ oz. Chat masala powder
1 cup Whole cashew nut
½ oz. Sour cream
1 Tbs. Vegetable oil
Few strands, Fresh coriander leaves, chopped

Procedure:
Soak the whole cashew nuts in water.
Cut chicken into medium size pieces.
Marinate chicken by mixing lemon juice, salt, ginger + garlic paste and all spices except the chat masala.
Let marinate for about five minutes.
Make a thick paste of the cashew nuts by grinding in a blender.
In a bowl, mix the cashew nut paste, sour cream and a little oil. Add the marinated chicken to this and let marinate further for at least two hours.
Line the chicken pieces on a skewer with as much of the marinade masala on it as possible and cook in a tandoor oven (or a grill at home) for about 8 to 10 minutes (till the chicken is well-cooked and has turned brown on the outside). Take care not to burn the outside.
Remove from skewer and sprinkle the chat masala and chopped coriander leaves before serving.

 

Tandoori Lamb Chops

8 ribs, Rack of lamb
1 tsp. Lemon juice
½ Tbs. Ginger paste
½ Tbs. Garlic paste
¼ oz. White pepper powder
¼ oz. Coriander powder
¼ oz. Cumin powder
½ tsp. Crushed red pepper flakes
½ tsp Fenugreek powder
¼ oz. Chat masala powder
½ oz. Sour cream
1 Tbs. Mustard oil
Salt to taste
Few strands, Fresh coriander leaves, chopped

Procedure:
Marinate the individual ribs by mixing lemon juice, salt, ginger + garlic paste and all spices except the chat masala.
Let marinate for about five minutes.
Add sour cream and mustard oil to the marinade and let marinate for 2 to 3 hours.
Line the lamb chops on a skewer with as much of the marinade masala on it and cook in a tandoor oven (or a grill at home) for about 10 minutes (till the meat is well cooked).
Remove from skewer and sprinkle the chat masala and chopped coriander leaves before serving.

 

Paneer Tikka

2 lbs, Cubes of paneer (cottage cheese)
1 White onion
1 each Red & green peppers
1 tsp. Lemon juice
½ Tbs. Ginger paste
½ Tbs. Garlic paste
¼ oz. White pepper powder
¼ oz. Coriander powder
¼ oz. Cumin powder
½ tsp. Fenugreek powder
¼ oz. Garam masala powder
¼ tsp. Ajwain (carom)
¼ oz. Chat masala powder
½ oz. Sour cream
Few drops food coloring
1 Tbs. Mustard oil
Salt to taste
Few strands, Fresh coriander leaves, chopped

Procedure:
Cut the paneer, onion and the peppers into flat cubes.
Marinate the paneer, peppers and the onion by mixing lemon juice, salt, ginger + garlic paste and all spices except the chat masala.
Let marinate for about five minutes.
Add sour cream, food coloring (as desired) and mustard oil to the marinade and let marinate for 2 hours.
Line the paneer along with the onion and peppers on a skewer with as much of the marinade masala on it and cook in a tandoor oven (or a grill at home) for about 6 minutes (till the paneer is well cooked).
Remove from skewer and sprinkle the chat masala and chopped coriander leaves before serving.
