EDISON - News 12 New Jersey traffic reporter Cara DiFalco is cooking up some special dishes for Cinco de Mayo.
Cara says both recipes are so basic you can add whatever you like to either of them.

2 ripe avacados 1/2 med. tomato - diced 1/4 med. red onion - diced Lemon juice Lime juice Salt & pepper to taste 1 tsp. chopped fresh cilantro
- Half the avacados and scoop them into a bowl - Add tomato & onion - Mix with fork - Add juice of half a lemon & half a lime - Add cilantro and mix - Salt and pepper to tasteTIP: Need that guacamole to last a few hours? Save the pits of the avacados! Toss them in with the finished product and they will help it hold its color!
2 tomatos - diced 1 yellow onion - diced 1 green bell pepper - diced 1 garlic clove (large) - diced 1 jalapeno (optional) - diced Lemon juice Lime juice 1 tbls olive oil 1 tsp chopped fresh cilantro Salt & pepper
- Place all vegetables and garlic in a bowl and mix gently - Squeeze juice from half a lemon and lime onto veggies - Add cilantro and mix - Add olive oil and mix until coated - Salt and pepper to tatseThis recipe is very basic and versatile; you can add or subtract any veggies or fruits you would like. Jersey Fresh corn would be great grilled and tossed in with a can of black beans. Or add a little mango and spoon over grilled chicken or pork.
