Cara's Cucina - Frittata:

1 tbls olive oil6 eggs10 cherry tomatos, halved1 c. baby spinach1/2 c moistened seasoned bread stuffing2 oz. feta cheese crumblesSalt & pepper to taste*Heat olive oil in a 9-10 inch saute pan over medium heat.*Beat eggs in a bowl.*Add veggies and toss to coat.*Add stuffing, salt and pepper and mix again.*Pour egg misture into pan, cook on 1 side until the bottom is golden brown.*Slide frittata out of pan onto plate of similar size.*Carefully invert frittata back into pan and cook until golden brown on opposite side.*Slide back onto plate, cut into wedges and serve warm.*You can substitute non-stick cooking spray for the olive oil if you'd like.
