Newark-based Manischewitz factory makes Passover matzos

NEWARK - Passover is still weeks away, but a local matzos manufacturer is hard at work.

Manischewitz, based in Newark, is one of the world's biggest producers of the product.

"We're in a big hurry because the cardinal law of matzos manufacture is that is has to take less than 18 minutes from the time the flour and water are mixed until the time it gets to the oven," says Rabbi Horowitz, who oversees production at the company.

"It not only represents the highest quality production standards, but it also represents the highest kosher standards for this most important product that links many people to their religion," he says.

Owners say the factory represents the history and tradition of matzos-making.
