Trainer John's Baked Oatmeal - My trainer came up with this healthy breakfast dish to get you going in the morning!

2 c. quick cooking oats (300 calories) 1 1/2 tsp. baking powder (10 calories)1 tsp. ground cinnamon (20 calories)2 tbs dark brown sugar (70 calories)1/3 c. chopped nuts (walnuts, almonds and pecans work best) (about 200 calories, depending on choice)1 egg (70 calories)1 egg white (15 calories)1 1/2 c. low fat milk (150 calories)1 tsp. vanilla extract (20 calories)1 tsp. olive oil (40 calories)1/2c. no sugar applesauce (60 calories)cooking spray (0 calories)

*Preheat oven to 350 degrees*In a large bowl, combine oats, baking powder, cinnamon and sugar.*Toast nuts in a pan until fragrant, about 5 minutes.*Add nuts to oat mixture.*In a medium bowl, mix whole egg, vanilla extract, oil, applesauce and milk.*Beat egg white in a separate small bowl until fluffy.*Combine egg mixture with dry ingredients. Then fold in egg white.**At this point you can flavor the dish however you'd like, if you're counting calories be sure to check how many more you're adding. Some examples are orange zest and craisins, smashed banana or about 2 tbs. of honey*Spray a 9-inch pie plate with the cooking spray, and bake oatmeal for 45-60 minutes, or until a toothpick inserted in center comes out clean.*Allow to cool and divide into 8 equal portions. Without any additions, each slice has about 120 calories. Serve warm.
