Stuffed Spinach and 3 Cheese Pie

2 tbs olive oil
3 cloves of garlic (look for the biggest cloves)
1/2 tsp red pepper flakes
1, 7 oz. package baby spinach
2 pizza doughs (homemade or store brought)
1 1/2 cups ricotta cheese
1 egg
salt and pepper
1 tsp parsley
4 oz mozzarella cheese
1/2 c. parmesan cheese

*Heat oil in a large saute pan, add garlic and red pepper and cook until fragrant, about 3 minutes.
*Add in spinach by the handful and allow to wilt before adding more. Cook entire package of spinach this way. Set aside.
*Stretch dough to fit over oiled pan. (use whatever size and shape you've got.)
*Mix ricotta with egg, salt, pepper and parsley.
*Spread ricotta mixture over dough.
*Spread spinach over ricotta.
*Top with parmesan and mozzarella.
*Stretch second dough over pie and fold the edges UNDER the first dough. This will create a tight seal. Brush top crust with olive oil and sprinkle with garlic powder (optional).
*Bake pie in a 450 degree oven for 25 minutes or until both crusts are golden brown.
