Stuffed French Toast
1 loaf challah bread, sliced into extra thick pieces
1/2 dozen eggs
Splash of milk
2, 8 oz. containers mascarpone cheese
2 tbs. honey
2 tsp. vanilla
2 lb. fresh strawberries, rinsed, hulled and sliced
*While holding each slice bread with your hand, use a sharp knife to cut a pocket horizontally in each piece.
*Pre-heat griddle over medium-high heat.
*In a wide, shallow bowl, beat eggs, add milk and mix again.
*Soak each piece of bread one at a time in eggs, ensuring both sides are well coated. Allow any excess egg to drip off before placing on griddle. Cooke each piece for about 3 minutes per side.
*Set French toast aside and scrape mascarpone cheese into a small bowl. Add honey and vanilla and mix well.
*Arrange French toast on plates. Using a butter knife and fingers, gently pull open the pocket and place a layer of strawberry slices, followed by the cheese filling, and then more strawberries. Do this with each piece.
*Once all toasts are filled, sprinkle each plate with cinnamon and sugar, give Mom a kiss and enjoy!
