1 pork roast
German style brown mustard
apple-cider vinegar
2-3 apples, peeled, cored and cubed
1 c. apple sauce

Note: the amount of sauerkraut and apple sauce is to your taste - if you like a more sour flavor, use more kraut, if you prefer the sweet, use more apple sauce - and of course it is all relative to the size of the roast you buy.
*Pre-heat oven to 350. Season pork with salt. Spray roasting dish with cooking oil.  Cover all sides of roast with mustard, and pour enough vinegar into the dish to just cover the bottom.

*Roast pork, 20 minutes per pound, until you have 30 minutes to go.  Remove roast from oven.  Combine sauerkraut, apple sauce and cubed apples - pour this mixture around the edge of the roast - scraping up any browned bits as you go.

*Return roast to oven with apples and kraut and cook for last 30 minutes.

*Allow the roast to rest for about 10 minutes before slicing it.  Serve with apples and kraut on the side.
