Cara's Cucina: Pastina Soup
Serves 2

4 c. Chicken Broth
1/2 c pastina
1 egg
parmesan cheese for serving

*Bring broth to a boil in a medium sauce pan.
*Add pastina and allow to boil for 8-10 minutes - then reduce heat to medium bringing soup to a simmer.
*Scramble the egg, pour it over simmering soup and stir until it breaks into tiny pieces and is distributed throughout the soup.
*Ladle into bowls and top with a small sprinkle of parmesan cheese.
