Mother's Day Baked Eggs - Start this recipe 1 day ahead of when you want to serve it.

6 eggs2 c. milk5-6 slices of bread1 c. shredded cheese (any kind you like) 5-6 breakfast sausages (optional) buttersalt & pepper

*Butter a baking dish. Set aside. *Beat eggs in a large bowl, then add milk, beat again to combine. Season with salt and pepper and set aside. *Butter each slice of bread, stacking them as you go. When each slice is buttered, cube the stack of bread. Place cut bread into bottom of prepared baking dish. *Top bread with cheese - and at this point if you would like to add anything else such as vegetables you could. *Pour egg mixture over bread, cover and refrigerate overnight (or at least 8 hours). *When ready, pre-heat oven to 350 degrees. *Brown sausage in a skillet and cut into bite sized pieces. Top eggs with sausage and bake, uncovered, for 30-60 minutes, or until eggs are set. If you feel the top is getting too brown but eggs have not set, cover with foil. *Serve immediately with Mom's favorite breakfast beverage!
