MoonShine's Guinness Shepherd's Pie - Pie Filling1lb ground beef1 large onion, small dice1 medium carrot, medium dice1 celery stalk, small dice1 clove garlic, chopped1 tbs canola oil2 tbs butter1 tbs tomato paste1 c. Guinness2 tbs flour1 c. beef or dark chicken stock1/2 c. panko crumbs mixed with 1/2 c. parmesan cheese
Mashed Potatoes2 lbs potatoes, peeled and cubed4 oz. butter1 c. heavy cream
*Boil potatoes until very soft, add in butter and cream and mash or whip. Set aside.*Pre-heat oven to 350 degrees.*Heat oil in a large pot over medium high heat, add meat and brown for 3-4 minutes.*Add in butter, onions, carrots and garlic and cook for another 5 minutes.*Stir in tomato paste, then add in flour and stir to combine.*Pour in Guinness and let reduce, 1-2 minutes.*Add stock and allow to reduce again.*Fill a casserole dish with the meat filling and allow to cool. Spread mashed potatoes on top.*Bake in oven for 30 minutes, then sprinkle panko mixture on top and broil until golden brown.
