Cara's Lentil Soup

Olive oil
1 small onion chopped
2 carrots chopped
2 chopped celery stalks
3-4 chopped garlic cloves
1 c. crushed tomato
2 c. green lentils
3 c. vegetable stock
4 c. water
salt
pepper
basil
parsley
2 bay leaves
red pepper flakes

*Add a little olive oil to the bottom of a heavy stock pot and warm over medium heat.
*Add in onion, carrots and celery and saute until onions become opaque, about 5 minutes.
*Add in garlic and saute another 2 minutes.
*Now pour in the crushed tomato and stir to mix.
*Add in lentils and immediately add in stock and water.
*Season soup with salt and pepper as well as other Italian spices to taste.
*Bring to a boil, reduce to simmer, cover and simmer for 1 hour, stirring occasionally. If soup looks dry add in more stock and/or water. After an hour taste to make sure lentils are cooked - they should be al dente like pasta.
*Serve warm from the pot with a little sprinkle of parmesan or ladle into tupperware and freeze to take to work or school!
