Cara’s Cucina: Kale Chips

1 bunch kale
1 tablespoon olive oil
1/2 teaspoon salt
1/4 c. Shredded cheese

*Pre-heat oven to 350 degrees.
*Wash and dry kale well. Tear the leaves into small pieces, disgarding the thick stems.
*Place the leaves in a large bowl and drizzle with olive oil and sprinkle with salt. Gently mix with your hand until pieces are evenly coated.
*Lay kale pieces on a cookie sheet in a single layer and bake for 10 minutes. Remove from oven and sprinkle lightly with cheese shreds. Return to oven for another 5 minutes.
*Allow chips to cool and enjoy! Store in an airtight container.
