Cara's Cucina: Homemade Pumpkin Puree

Homemade Pumpkin Purée - 1 4-5 lb sugar or pie pumpkin (pie pumpkins are typically smaller) Cooking spray1 c. water

*Preheat oven to 450. *Cut the pumpkin in half. Be careful doing this as pumpkins are both round and tough which makes them difficult to cut! *Scoop out the seeds and fibers from the inside of the pumpkin and place in a bowl, reserve for roasted pumpkin seeds. *Line a cookie sheet with foil and mist with cooking spray. *Spray cut side of pumpkin with cooking spray and then place cut side down on cookie sheet. Spray skin of pumpkin as well. Add water to the pan. *Roast pumpkin for 45 minutes or until a fork easily pierces the skin. The skin will turn a deep orange. *Allow pumpkin to cool until you can touch it and then scoop the flesh out and place in the bowl of a food processor. *Purée the pumpkin until very smooth. For added smoothness, push the purée through a sieve or ricer to remove any particles. You're now ready to make pumpkin everything!!

*And for a delicious and healthy snack, rinse off those seeds you set aside, spread them out in a single layer on a foil lined baking sheet, sprinkle with some salt and roast them for a few minutes with the pumpkin! Just keep an eye on them, you don't want them to burn!
