Fried Catfish Sandwich 
Serves 2-4

2 catfish fillets
1 c. AP flour
1 1/2 tbs. salt
1 tbs. cracked black pepper
1 1/2 tbs. smoked paprika
1 tbs. cayenne pepper
1 tbs. garlic powder
1 tbs. onion powder
canola oil

1/2 c. mayo
1 tbs. sriracha
1 tsp. garlic powder
salt & pepper to taste

Potato Bread

*Fill a deep sauté pan with about 3 inches of canola oil and set over medium heat.
*In a wide dish combine flour, salt, pepper, paprika, cayenne, garlic powder and onion powder - whisk until evenly mixed.
*Dredge catfish in flour mixture and place into hot oil.  Cook for 4-6 minutes per side depending on size of the fillet.
*Once crispy and brown on all sides, remove fillet from oil and place on paper towel lined plate to drain.  Repeat with second fillet.
*In a small bowl combine mayo, sriracho, garlic powder, salt & pepper.  Whisk until well combined.
*Spread a tablespoon of sriracha mayo on one slice of bread and add fillet, top with a second slice and enjoy!
