First Night in Naples Pasta - This dish was made for me around 2 in the morning when my friends and I FINALLY arrived in Naples after our train had been delayed for several hours. A friend's cousin whipped it up for his hungry guests and we've all been in love with it ever since.

1 onion2-3 zucchiniolive oil1/3 lb pancetta (italian bacon)1.2c. heavy cream1 tbs butter1/2c. parmesan1/2c. pecorino romano1 lb pasta

*Dice onion and pancetta*Using a large cheese grater shred zucchini*Place diced pancetta in a small saute pan and cook over medium-high heat*At the same time, put a small amount of olive oil in a large saute pan and add onions to cook over medium-high heat*Salt a large pot of water and set to boil*When onions have turned translucent, add zucchini and turn heat to low*Once water is boiling cook pasta according to package instructions, but not all the way through*When fat has rendered from the pancetta and it has some brownish spots, add it to the onions and zucchini*Once pasta is cooked and drained, add it to pan with veggies and pancetta*While mixing, add heavy cream - enough to coat the pasta*Add the butter and cheeses and mix until pasta is completely coated*Serve hotClick Here to see previous Cara's Cucina segments
