Aunt Mary's Ricotta Christmas Cookies

2 sticks of butter
2 c. sugar
3 eggs
1 lb. ricotta
3 tsp. vanilla
1 tsp. salt
1 tsp. baking soda
4 c. flour


*Cream butter and sugar together.
*Add eggs in 1 at a time, mixing after each addition.
*Add in remaining ingredients and mix well until a sticky dough forms.
*Drop dough by rounded spoonfuls onto a greased (or parchment paper lined) cookies sheet. The cookies spread a bit so leave about an inch around each one. If you're using sprinkles to decorate add those now. If you plan to frost the cookies, bake them first and let them cool completely before using icing or frosting.
*Bake at 350 degrees for 12-15 minutes or until bottom edges get golden but tops remain pale. Cookies should be soft and chewy!
