Aunt Karin's Sweet & Sour Passover Meatballs - For the meatballs: 2 lbs ground beef2 eggs1/2 c. matzo meal1 small onion, grated1/2 10 oz. can of Rokeach tomato and mushroom sauce
For the sauce:1 1/2 10 oz. cans Rokeach tomato and mushroom sauce4 tbs sugar3 tbs lemon juice12 pitted prunes, cut in half
*Combine all meatball ingredients and mix with hands until well combined.*Set aside while making sauce.
*Pour sauce into large pot, swirling water in each can and putting in pot.*Add sugar, lemon juice and prunes and place over high heat.*Bring to a boil, then reduce to simmer.*Form meatballs with hands, wetting hands after every 2-3 meatballs to prevent sticking. Place meatballs in pot.*When all the meat has been used, gently stir or cover the pot and shake it gently to coat everything with sauce.*Cook meatballs for 45 minutes, either stirring or shaking every 15 minutes.*Serve warm as an appetizer or as part or a meal!
