Food trucks get creative to stay afloat during pandemic

The pandemic has affected every business throughout the world. And some food trucks in New Jersey have been getting creative to stay afloat.
Many food trucks rely on festivals throughout the Garden State for most of their business. Others rely on parties and events. And everything shut down when the country shut down.
Jeffrey Jimenez, owner of Cupcake Carnivale, says he had no business or revenue coming in when the pandemic hit. He has since drummed up some business by becoming a food delivery service, as well as a takeout service. He adds that during this time, he has been able to open a storefront for his business – a dream of his for a while.
Dean and Emily Hodecker, co-owners of Good Food=Good Mood, say at first their truck was shut down because everything was canceled. Soon, though, they “found the need for food trucks in homeowners’ associations, communities, large apartment complexes,” says Dean. They also offer a do-it-yourself barbecue kit for customers.
