2 1/2 c. flour
4 tsp. baking soda
2 tsp. cinnamon
1 tsp. ground allspice
1 tsp. ground ginger
1/4 c. brown sugar, packed tightly
1 very rip banana
1/2 c. unsweetened apple sauce
1/2 15 oz. can pumpkin (or about 1 cup)
1 1/2 c. half & half
1/4 c. butter, melted
*Prepare waffle iron according to manufacturer's instructions.
*In a large bowl, combine flour, baking soda and next 4 ingredients. Whisk to combine.
*In a medium bowl, mash banana with a fork, add in apple sauce and stir to combine.
*Next add pumpkin to banana mixture and again combine. Finally add in half & half and whisk until smooth.
*Pour liquids into bowl with dry ingredients and mix until combined. Stir in butter.
*Using a 1/2 c. measuring cup and a spatula, pour batter onto waffle iron, spreading evenly with spatula - cook according to manufacturer's instructions.
*Place cooked waffled on a plate in a warm area - serve warm with butter & syrup!
