Pasta with Beef & Mushrooms
1lb ground beef
1 package, sliced baby Bella mushrooms, roughly chopped
3-4 cloves garlic, peeled and chopped
1/2 c. olive oil, divided
1lb pasta, preferably spaghetti
1/2 c. grated Parmesan cheese
Salt and pepper to taste
*Heat 1/4 c. olive oil in a large sauté pan. Add garlic and heat until fragrant. Add in chopped mushrooms and cook until opaque.
*Meanwhile, bring a pot of well salted water to a rolling boil and cook pasta until al debate.
*Add beef to pot with mushrooms and brown, seasoning with salt and pepper.
*Drain pasta reserving 2 c. of pasta water. Put pasta directly into pan with beef and toss to coat.
*Add in the 2 c. of pasta water and bring to a boil again. Once liquid begins to reduce add in remaining olive oil and Parmesan. Toss again, taste, adjust seasoning if needed and serve warm in bowls.
